A few years ago, no one was talking about kale, but now it’s everywhere. Sure, at first it seemed like just a trend, but kale is here to stay—and we think that’s a good thing because it has tons of health benefits. Kale is in the same veggie family as broccoli and cauliflower, which means it’s high in vitamins A, C and K. Plus it has almost 3 grams of protein per serving and is high in fiber—all that goodness and 1 cup of cooked kale is just 40 calories. 

But the real reason kale’s at the top of everyone’s list isn’t because it’s good for you, it’s because it’s a delicious and versatile ingredient. It can be blended into smoothies, stirred in soups, used in place of basil in pesto or roasted into crispy, chiplike perfection. 

Kale also makes a near-perfect leafy base for salads. That’s why we’re so excited about our two new summer salads that star this superfood. In the Power Kale Caesar Salad with Chicken, kale teams up with romaine, chicken raised without antibiotics, parmesan crisps and our Caesar dressing. The Mediterranean Chicken & Quinoa Salad pairs kale with quinoa in a blend of Mediterranean flavors. 

Ready to try it at home? Make kale chips by tearing washed and dried kale leaves into roughly 2-inch pieces. Spread them in a single layer on a baking sheet, drizzle with olive oil and sprinkle with sea salt, then bake at 300ºF for about 20 minutes.

So simple. So crispy. So totally guilt-free!
