The Sous Vide Difference
Our ready-to-serve meats are cooked using the sous vide (pronounced “soo veed”) method. The French phrase for "under vacuum," sous vide is the cooking technique beloved by restaurant chefs around the world. Now you can enjoy its delicious tasting results and time-saving benefits in your kitchen, with Panera meats.
First, our all-natural meats are seared for flavor and simply seasoned. Then, they’re vacuum sealed in specially designed pouches and placed in a controlled low-temperature water bath to cook for an extended period of time, sometimes as long as 72 hours. Finally, the meats are refrigerated until enjoyed.

- With the sous vide method, juices are sealed in, making our meats especially flavorful. We do not use any artificial flavors or preservatives.
- Our meats are perfectly and evenly cooked from edge to edge. Moisture is locked in, for mouth-watering texture and tenderness.
