Cheddar Potato Carrot Casserole

Ingredients

  • 20 oz. bag refrigerated, shredded potatoes
  • 16 oz. Panera Bread Broccoli Cheddar Soup
  • 2 cups shredded Vermont white cheddar
  • 1 cup shredded carrots
  • 1/2 cup sour cream or plain Greek yogurt
  • 4 green onions, sliced (about 1/4 cup)
  • crumbled potato chips (optional, for top of casserole)
  • 20 oz. bag refrigerated, shredded potatoes
  • 16 oz. Panera Bread Broccoli Cheddar Soup
  • 2 cups shredded Vermont white cheddar
  • 1 cup shredded carrots
  • 1/2 cup sour cream or plain Greek yogurt
  • 4 green onions, sliced (about 1/4 cup)
  • crumbled potato chips (optional, for top of casserole)

Directions

Step 1.

Preheat oven to 450°F. In large mixing bowl, combine potatoes, soup, cheese, carrots, sour cream and green onions.

Step 2.

Spread in lightly greased 9” x 13” baking dish and top with crumbled potato chips, if using. Bake for 20-25 minutes, until vegetables are tender and top is golden brown.
