For each wrap, spread hummus over top 2/3 of a tortilla. Layer on cheese, peppers, carrots, cucumbers, scallions, tomatoes, and lettuce in a row in the center.
Compress filling slightly, and then fold the bottom of the tortilla over the filling. Fold in about 1 inch of the sides and roll firmly away from you, compressing the filling as you roll.
Cut each wrap in half on a diagonal.
Tip: If you can’t find baby cucumbers, use 1/3 of a peeled English cucumber (the long, skinny variety shrink-wrapped in plastic at the supermarket).
