  • 6 cups mixed greens
  • 3 Roma tomatoes, cored and sliced into wedges
  • 8 slices cucumber
  • ¼ head red cabbage, thinly sliced
  • 2 teaspoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar or your favorite vinegar

Directions

Step 1.

Mix the greens, tomatoes, cucumber, and cabbage together in a large zip-top plastic bag and add the oil and vinegar. Shake to coat the ingredients evenly. Arrange the salad on two dinner plates and your favorite seasonings to taste.
