Minted Avocado Toast

  • 4 thin slices Panera Bread Whole Grain Bread
  • ¼ cup frozen petite peas, thawed
  • ½ cup hot water
  • 1 avocado, pitted, peeled, and coarsely chopped
  • 1 tablespoon fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chopped fresh mint
  • ½ teaspoon salt
  • ¼ teaspoon red pepper flakes (optional)

  • ¼ cup frozen petite peas, thawed
  • ½ cup hot water

Directions

Step 1.

Toast the bread.

Step 2.

Meanwhile, soak the peas in the water for 5 minutes. Drain and mash well with a fork. Add the avocado and mash together. Stir in the lime juice, oil, mint, and salt.

Step 3.

Spread the mixture on the toast and garnish with red pepper flakes (if using).

Tip: For an extra-smooth spread, squeeze the peas to pop them from their outer skins before mashing. Discard the skins.
