Shaved Root Vegetable Salad

  • 2 carrots (4 ounces), peeled
  • 2 small parsnips (4 ounces), peeled
  • 1 small turnip (4 ounces), peeled
  • ¼ small rutabaga (4 ounces), peeled
  • 5 radishes (4 ounces), trimmed
  • ½ cup Panera Bread Caesar Salad Dressing
  • ½ cup roasted cashews
  • 1 tablespoon chopped fresh parsley (optional)
  • 2 carrots (4 ounces), peeled
  • 2 small parsnips (4 ounces), peeled
  • 1 small turnip (4 ounces), peeled
  • ¼ small rutabaga (4 ounces), peeled
  • 5 radishes (4 ounces), trimmed
  • ½ cup Panera Bread Caesar Salad Dressing
  • ½ cup roasted cashews
  • 1 tablespoon chopped fresh parsley (optional)

Directions

Step 1.

Use a vegetable peeler and firm pressure to thinly slice all the vegetables into 2-inch-long strips.

Step 2.

Divide the salad among plates and top with the dressing and cashews. Sprinkle on the parsley if using.

Tip: A U-shaped vegetable peeler works best here, but a classic straight peeler does the job too. Speed up the slicing by using a handheld mandoline slicer.
