Sriracha Tuna Wraps

Ingredients

  • 2 cups cooked rice
  • 1 can (5 ounces) oil-packed tuna (preferably troll- or pole-caught U.S. albacore), drained and flaked
  • 1 slice cooked bacon, crumbled
  • 1 Thai chile or small jalapeño chile, seeded and minced
  • 1 teaspoon minced lemongrass
  • 1 small scallion (white and green parts), finely chopped
  • 1 teaspoon minced or grated fresh ginger
  • 2 tablespoons chopped cilantro and/or fresh mint
  • 2 tablespoons peanut oil or extra virgin olive oil
  • Juice of ½ lime
  • 1½ teaspoons fish sauce
  • 1 teaspoon toasted sesame oil
  • 4 leaves iceberg or Boston lettuce
  • Sriracha hot sauce, for garnish

Directions

Step 1.

Mix together everything but the lettuce and Sriracha.

Step 2.

Divide the mixture among the lettuce leaves, garnish with Sriracha, and roll up the leaves to secure the filling.

Tip: Look for fish sauce in the Asian aisle of your supermarket or in an Asian market. It adds incredible savory flavor here, but if necessary you could leave it out. For more crunch and protein, add some roasted peanuts along with the Sriracha.
